Our story

Life got busy.

Most days are spent behind a screen. Somewhere along the way, we realized we were missing the simple things — slowing down, sharing a conversation, and spending time with the people around us.

Growing up, Vietnamese coffee was always more than coffee. It was a reason to gather. A phin takes its time, and that's the beauty of it. The slow drip reminds us to pause, be present, and enjoy the moment together.

That's why we started Cội — a small Vietnamese coffee pop-up in San Antonio, inspired by our roots and built around one simple idea: good coffee brings people together.

When we set up that first phin, no one else in San Antonio was pouring Vietnamese coffee out of a pop-up. We didn't set out to be the first — we just missed the coffee we grew up with, and hoped a few other people did too.

New to Vietnamese coffee?

A few things people ask us at the table.

What is Vietnamese coffee?

Dark or medium-dark roast coffee, mostly robusta, slow-dripped through a phin straight into the cup. The classic is cà phê sữa đá — poured over condensed milk and ice. Bold and balanced, never thin.

What's a phin?

A small metal filter that sits on top of the cup. Hot water drips through the grounds a little at a time, so one cup takes a few minutes. That's the slow part — and the point.

Where can I find Cội in San Antonio?

We're a pop-up, so there's no storefront. We pour at markets, studios and neighborhood events around the city. We post where we'll be next on Instagram.

Can I order ahead?

Bottles, yes. When pre-orders open, you can order our bottled coffee online, choose a pickup date and location, and pay by Venmo or Zelle. Drinks at the pop-up are made to order on the spot.
